Siri ya Mchuzi Curry Beans

Ingredients

  • 2 cups cooked beans (yellow beans)
  • 1 onion (diced)
  • 2 tomatoes (blended)
  • 2 tablespoons of oil
  • I tablespoon of Siri ya Mchuzi curry powder
  • 1 tablespoon of Chibundiro Mild Chillies
  • 1 teaspoon cumin seeds
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • Salt, to taste
  • Fresh coriander leaves (chopped)

Method

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onion and sauté until light brown.
  3. Stir in minced ginger and garlic. Sauté for another minute
  4. Add Siri ya Mchuzi curry powder, Chibundiro Mild Chillies, paprika, and a pinch of salt. Mix well to create a fragrant spice base.
  5. Add diced tomatoes and cook until they are mashed
  6. Add the cooked beans and mix everything together, ensuring the beans are coated with the aromatic spice mixture.
  7. If the mixture is too dry, you can add a splash of water or vegetable broth to create a rich sauce.
  8. Let the beans simmer on low heat for about 10-15 minutes, allowing the flavors to meld and the beans to absorb the delicious curry goodness.
