As underrated as beans are, this vibrant dish combines the richness of hearty beans with the aromatic magic of our signature Siri ya Mchuzi curry powder. Prepare yourself for a good time!
Ingredients
- 2 cups cooked beans (yellow beans)
- 1 onion (diced)
- 2 tomatoes (blended)
- 2 tablespoons of oil
- I tablespoon of Siri ya Mchuzi curry powder
- 1 tablespoon of Chibundiro Mild Chillies
- 1 teaspoon cumin seeds
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- Salt, to taste
- Fresh coriander leaves (chopped)
Method
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
- Add chopped onion and sauté until light brown.
- Stir in minced ginger and garlic. Sauté for another minute
- Add Siri ya Mchuzi curry powder, Chibundiro Mild Chillies, paprika, and a pinch of salt. Mix well to create a fragrant spice base.
- Add diced tomatoes and cook until they are mashed
- Add the cooked beans and mix everything together, ensuring the beans are coated with the aromatic spice mixture.
- If the mixture is too dry, you can add a splash of water or vegetable broth to create a rich sauce.
- Let the beans simmer on low heat for about 10-15 minutes, allowing the flavors to meld and the beans to absorb the delicious curry goodness.
- Taste and adjust the seasoning, adding more salt or Siri ya Mchuzi curry powder if desired.
- Serve the Curry Beans hot, garnish with the chopped coriander leaves with a side of steamed rice
