Ingredients
- 1 Cup mashed Bananas
- 2 cups of Flour
- 100g unsalted Butter
- Baking Powder
- 1 table spoon Siri ya chai ( Tea masala)
- 1 cup Sugar
- 1 1/2 cup milk
- 2 Eggs
Method
Keep the eggs , butter and all other ingredients out of the fridge a little before you begin to work on the recipe.
- Pre-heat the oven to 170c or 350F for at least 15 minutes.
- Grease and 8 by 8 inch square cake pan and line with a parchment paper or dust some flour all over the cake tray including the sides.
- Before you begin ensure the butter is soft but still cold. To check press the butter with your finger it should not be too soft.
- Add 1 cup of sugar and 100g of salt into a mixing bowl.
- Beat them together until, light, pale and fluffy.
- Now add 1 tablespoon of siri ya chai and 1 eggs. Mix gently until combined and then then beat until well incorporated and creamy.
- Add the other egg and beat until just creamy.
- Place a sieve over the mixing bowl. Add two cups of flour, 1/2 teaspoon salt, and 2 1/2 teaspoons of baking powder. Gently mix them well with a spoon, then sieve them the creamed butter and egg mixture.
- Mix it gently with the whisk. Pour 1/4 cup milk and mix gently. Add another 1/4 cup milk.
- Mix until well combined on a medium speed. Add 2.5 tablespoons of milk while mixing. Scrap the sides and bottom to make sure everything is combined.
- Add one cup mashed bananas, mix again until well combined. Avoid over mixing!
- Pour the mixture into the tray. Tap the tray to the counter a few times to release air bubbles!
- Bake to 25 – 30 minutes. Insert a skewer and if it comes out clean the cake is done!
- Place the cake in a wired rack and cool for 10 minutes so it doesn’t sweat.
- Cool completely before slicing!
