Vegetable cups Recipe

Ingredients:
1) 283 grams of chopped spinach
2) 2 eggs or 3/4 cup of egg substitute
3) 3/4 cup shredded reduced-fat cheese (optional)
4) 1 table-spoon Chibundiro
5) 1/4 cup diced green bell peppers
6) 1/4 diced onions
7) 3 drops of hot-pepper sauce (optional)
Recipe:
1) Microwave the spinach for 2 and 1/2 minutes on high. Drain the excess liquid.
2) Line a 12-cup muffin pan with foil banking cups. Spray the cups with cooking spray or lather oil
3) Combine the egg, cheese, peppers, onions and spinach. Mix well
4) Divide evenly on the muffin cups
5) Bake at 176° C (350° F) for 20 minutes or until toothpick inserted comes out clean

Serve!
